Hi everyone!
Today I want to share with u the recipe of a Vegan Ragù, of course how u know the traditional ragù alla Bolognese is made with meat, but recently I discovered the soy granules so I tried to make the ragù like first thing of course.
I was impressed by the fact it’s so similar to the original, I will write also the recipe of the real ragù alla Bolognese soon.

The recipe:
Ingredients:
400 gr Soy Granules
1 onion chopped in small pieces
1 carrot chopped in small pieces
A piece of celery chopped in small pieces
700gr of passata (tomato sauce)
q.s. salt and pepper
q.s red wine
Let’s start with the soffritto.
Soffritto in Italy it’s how we call the mix of finely chopped carrot, celery and onion cooked in an oiled pan or pot and left to cook until it turns brown.
So take your fav pot, I always use my granma’s pot to make ragù add in the pot two table spoon of olive oil and make the soffritto with onion, carrot and celery.
After few minutes add the soy granules and soak it with wine, the soy have to became of the same colour of the wine.
I know that in a lot of recipe u will read soak it with water, but belive me it way more better with red wine.
Stir it for some minutes, now add the passata, season it with salt and pepper.
Let it cook for at least 1hour on low heat, during this time simmer, stirring occasionally, until the sauce is thick.
Of course u can use it for pasta, I also love add it on a slice of bread.
